Cherry filling
250g cherries, stem and kernel removed
180 ml cold water
50g fine sugar
1 teaspoon lime juice
Coconut filling
90 ml coconut milk
90g organic yogurt
35g fine sugar
These tasty, freshly made cherry-coconut popsicles are quickly made, but there is freezing time between the layers. Remove the stems first and pop out the kernels. Then already most of the work is done!
How to make cherry-coconut popsicles
Squeeze the lime, take a tespoon juice and freeze the rest.
Add water, sugar and lime juice to the cherries.
Bring to the boil, cook until soft in 10-15 minutes.
Pour the cherries with the juice into the food processor.
Blend the cherries until they are fine.
Pour the cherries and juice through a sieve.
Fill your molds up to 1/3.
Cover with foil and poke in ice cream sticks.
Put the popsicles 2 - 3 hours in the freezer.
The cherry layer must freeze well before you pour the 2nd layer on top, otherwise the colours will run out
How to make the coconut-yogurt layer
Put coconut milk, yogurt and sugar in a jug.
Mix it thoroughly until combined.
Fill the mould to 1/3 on the frozen layer.
Place the ice mould at least 2-3 hours back in the freezer, but the foil can stay off
Pour the last cherry layer on top and let freeze overnight.
Your cherry-coconut ice is ready and they look delicious, let's taste!
