Linzer Christmas biscuits

Shopping list
175g flour
60g caster sugar
1 sachet of vanilla sugar
a beaten egg yolk (free range)
125g soft butter
icing sugar and flour to sprinkle
jam (raspberry, strawberry or cherry)

After an Austrian Christmas tradition we make today pretty Linzer kekse (biscuits). There are many recipes for these jam-filled cookies available. We choose a very easy one, so we may have a cozy afternoon baking them with the kids. Lovely, the whole house smells like Christmas biscuits!

How to make Linzer biscuits

Stir sugar, vanilla sugar and flour until combined.

Beat the egg yolk and add it to the flour mix.

Mix with the dough hook until you have coarse crumbs.

Knead the dough quickly smooth by hand, wrap in cling film.

Allow the dough to rest for an hour in the fridge.

Sprinkle a thin layer flour onto a silicone mat.

Roll the dough until 0.5 cm thickness.

Preheat the oven to 175°C

With this special cookie cutters it is easy to do.

First you cut out the bottom using just the cutter.

Than you cut the top with the small adjustments.

The little dough cut outs we also bake, at the same time.

The youngest mini-monsters find the tiny cut out shapes too cute to knead again. We bake them too.

Bake the biscuits for 10-12 minutes until light brown.

Spread jam unto the bottom halves.

Sieve icing sugar unto the top halves.

Press both halves on each other and look what beautiful biscuits!

Admittedly, the tiny dolls biscuits are very cute ;)
