Shopping list
500g pizza flour, dash of salt
250g creme fraiche
3 finely chopped shallots
50g Parmesan
4 ripe, fresh figs
packet of mini mozarella balls
100g prosciutto
30ml balsamic vinegar
30ml Italian olive oil
50g rocket leaves
sea salt & freshly grounded black pepper
Quick and easy to make but also very delicious are these little pizzas with classic Italian flavours of prosciutto, mozzarella, arugula and Parmesan cheese with extra virgin olive oil and balsamic vinegar. Extra easy to make with ready made pizza dough or a pizza dough mix which you make by following the instructions on the package.
How to make mini-pizza's
Roll out the dough to a thickness of 2 to 2.5 cm.
Use a cup or bowl to cut small circles from the dough.
Roll the edges towards the centre of the circle.
Whisk the crème fraiche fluffy in a large bowl.
Stir in the Parmesan and the shalotts.
Add salt and freshly ground pepper.
Spread two full tablespoons over each pizza.
Preheat the oven to 200°c.
Cut the figs, mozzarella and the prosciutto.
Place the clean rocket in a bowl.
Place the Prosciutto strips on top of the salad.
Add the halved little mozzarella balls to the bowl.
Place on top of it the washed fresh figs, cut into four wedges each.
Toss it all with the olive oil and the balsamic vinegar.
Cover the pizzas generously with the fig salad, divide it even.
Bake the pizzas in 10-15 minutes crispy on the edges.
Serve the pizzas straight from the oven.
