For the fried apples
50g butter
icing sugar, to taste
3 peeled apples, cut into pieces
250 ml double cream, to serve
2 tablespoons caster sugar
for the pancakes
3 large, free-range organic eggs
300 grams of self-raising flour
150 grams of fine sugar
100 ml milk
1 tablespoon sunflower oil
For our National Pancake Day we make extra tasty little pancakes for the monsters. They are still too young to bake pancakes themselves for the elderly who live nearby. But in a few years we will surprise them, our little monsters are already looking forward to it!
We start by making the apples and then we bake the pancakes
Remove the core, peel the apples and cut into pieces.
Heat the butter and dissolve the icing sugar in it.
Place the apple chunks in the mixture in the frying pan.
Fry the apples until golden while you off and on keep stirring.
Whip the cream lightly and put in the fridge.
Whisk the eggs and add the sugar.
Stir in the milk and flour as well.
Beat it all together until you have a thick, smooth batter
Fry 3 pancakes in one go on medium low heat.
When bubbles start popping on top, flip the pancakes over.
Serve the little pancakes nice and warm with the fried apples and whipped cream on the side
