100g patent flour
30g caster sugar
a pinch of salt
70g cold butter
1 free-range organic egg yolk
for the filling
50g chocolate, to taste
250g whipped cream
2 tablespoons fine sugar
fresh fruit, to taste
On June 24th it's Saint John's Day again, a really fun day at school the monsters. It's a party all day long, with the jump over the fire as the highlight of the day! All the parents bake delicious treats, because afterwards the kids are going to have a picnic, hopefully outside. The monsters are already in the mood! But wait a minute, we're going to bake +/- 15 summer tartlets first!
How to make small but festive St. John's Day cakes
Stir the flour, sugar and salt until combined.
Cut the butter into cubes and add them to the flour mixture.
Rub the butter cubes into the flour until it turns into crude crumbs.
Separate an egg yolk from the egg white.
Add the egg yolk to the flour mixture.
Knead it by hand until smooth.
Wrap the dough and put in in the fridge.
Allow the dough to cool for at least 1 hour
Preheat the oven to 200°C
Fetch the dough from the fridge.
Greese the baking tins generously.
Roll the dough to 1/2cm thickness
Cut circles out of the dough.
Press the circles neatly into the tins.
Bake the cases in +/- 10 minutes golden.
Let the tartlet cases cool on a wire rack.
Meanwhile, you make the tartlets filling
Melt the chocolate in a bain marie.
Brush chocolate into the cups.
Let it set completely.
Fill the cups with whipped cream.
Decorate the little St John's tartlets with fresh summer fruits.
The little monsters are happy to take the festive tartlets to school!
