500g Focaccia flour (La Tua Farina)
250ml water
5 tablespoons extra virgin olive oil
pinch of salt
100g garlic butter
some fresh oregano
some fresh thyme
100g mozzarella
100g grated riped cheese
oil for greasing
This flavoursome garlic / cheese bread you can eat on it's own, as a snack or for lunch with a tasty soup. The soup we make tomorrow, fresh tomato soup.
How to make garlic / cheese bread
Place the flour and the salt into a large mixing bowl.
Add the water and 3 tablespoons of olive oil to it.
Mix all ingredients until you have a cohesive dough.
knead another two tbspoons olive oil into the dough.
Roll the dough into a rectangle and spread on garlic butter.
Sprinkle the grated cheese on to the garlic butter on the dough.
Cut the mozzarella balls into little slices.
Wash and drain the herbs on kitchenpaper and cut them fine.
Sprinkle the mozzarella and the herbs on the cheese.
Roll up the dough carefully, try to roll evenly.
Cut the dough roll first in half, then in to eight pieces.
Grease a 25-30cm baking mold and preheat the oven to 200°C
Place the bread slices in the tray and spread garlic butter on them.
Cover the baking tray loosly in cling film and let the dough rise for 30 minutes.
Bake the bread in the middle of the oven golden in 25-30 min.
Leave the bread to cool in the tray on a wire rack.
