75g butter (room temperature)
75 g caster sugar
½ free-range organic egg (room temperature)
1 teaspoon vanilla extract
125 grams Zeeland flour, sifted
1/2 teaspoon baking powder
red fondant icing
pink fondant icing
edible paint, gold & a paint brush
Chinese New Year without animal biscuits, that is of course not possible! We make little rabbits because 2023 is the year of the rabbit. The mini-monsters get a mini cup of tea after school, because they are big biscuit eaters but little tea drinkers. ;))
How to make Chinese New Year's mini Rabbits (vanilla biscuits)
Place a sheet of baking paper on the baking tray
Mix butter and sugar until creamy.
Mix in the half egg.
Mix in the vanilla.
Scrape the sides pf the bowl clean.
Sieve flour and baking powder into the bowl.
Fold the flour mixture into the butter mixture.
Knead it briefly and wrap it in cling film.
Place the dough 30 minutes in the fridge.
Then roll out the dough evenly.
Cut out the rabbits.
Place the rabbits on the baking tray.
Preheat the oven to 170°C
Place 10-15 minutes back in the fridge.
Bake the rabbits 8 - 10 minutes.
Let the biscuits cool on the baking tray.
Roll out the fondant thinly while the biscuits cool
Cut out rabbits and stick them on the biscuits.
Paint the ears, noses and tails with edible paint (for example).
