150g cauliflower
225g bell peppers, in 3 colours
125g carrots
75g green beans
75g cucumber
3 large spring onions
½ L water
½ L white wine vingar
1 tablespoon (coarse) sea salt
1 tablespoon sugar
½ whole peppercorns
1 bay leaf per jar
This is how you make La Giadiniera
Chop the veg coarsly.
Wash it thoroughly.
Pour water and vingar in the pot.
Add the salt and sugar.
Also add the peppercorns to the mixture
Bring the vinegar mixture to a boil.
Boil the cauliflower for 3 minutes.
Boil the other veg for 5 minutes.
Add the cucumber to boil the last minute
Separate the cooking liquid from the veg.
Place the vegetables in the sterilized jar.
Sieve the cooking liquid.
Pour it to 1cm above the vegetables.
Put the bay leaf and possibly some peppercorns in the jar and seal it
Allow the La Giardiniera to cool completely.
Store the sealed jar in a cool and dark place.
Once opened: eat the vegetables within a few days
