Shopping list for 12 cupcakes
250g caster sugar
250g butter (room temperature)
3 free-range organic eggs (room temperature)
1 teaspoon vanilla extract
250g self-raising flour
4 tablespoons milk
fondant icing, in various colours
Today we are doing a trial bake, we are baking our famous vanilla cupcakes for the Birthday Boy's school treat. Those are the most loved cupcakes here, whatever we suggest. Cupcakes which are coloured on the inside, with fruits or other fun flavours, no.
And of course it is our Birthday Boy who gets to choose. Vanilla with or without whipped cream it is, that remains the favorite. We do decorate the cupcakes with Lego figures, to still come up a little surprising. :)))
How to make Lego cupcakes
Mix butter and sugar creamy in 5 minutes.
Mix the eggs into the mixture one-by-one.
Scrape the butter from the bowl's edges.
Beat the vanilla extract into the mixture,
Gradually Sift in the flour, in parts.
Fold the flour into the mixture.
Finally fold in the milk as well.
Preheat the oven to 170°C
Now you have a nice smooth batter.
Place the cases in the baking tin.
Spoon in the batter.
Slide the cupcakes in the oven.
Bake the cupcakes for +/- 25 minutes or until golden brown
Firstly let them cool in the tin.
Then cool completely on a wire rack.
Whip the cream with the sugar.
Cut the Lego figures out of fondant icingand let it harden.
Pipe on whipped cream and press the lego figures onto the cupcakes.
