Shopping list for two
2 burgers
2 ciabatta rolls
1 large eggplant
1 courgette
2 red onions
a bag of mixed salad
1 mozzarella ball
grated Parmesan cheese
jar of sun-dried tomatoes
olive oil, to fry
Italian dried seasoning, to taste
sea salt & freshly ground black pepper, to taste
A totally different burger, for lovers of Italian flavours. With lots of fresh vegetables and cheese. Very tasty on the barbecue but in wet weather fry them in a grill pan.
How to make Italian Burgers
Slice the egg plant and the zucchini thick.
Place them on kitchen paper, sprinkle salt, pepper,spices on.
Drizzle olive oil on both the vegetable slices.
Fry the eggplant slices first in the grill pan.
Fry pretty charcoal diamonds on both sides.
Slide them on a plate in the oven.
Fry the zucchini and the onions the same way.
Brush olive oil on both sides of the burger.
Fry also diamonds on the burgers in the grill pan.
Flip the burgers and put slices of Mozzarella on them.
Sprinkle Parmezan cheese on too and let the cheeses melt.
Cut 2 ciabatta open and place lettuce on both sides.
On the lettuce goes raw onion and the grilled veg.
On top of the vegetables go the fried onions.
Then sun dried tomatoes with the burger on top.
Add ketchup or mayonnaise but without the burgers are tastiest!
