125 gram flour
75 gram butter
75 gram caster sugar
1 small free range egg
1 bag of vanilla sugar
1 teaspoon of baking powder
a dash of salt
50 gram icing sugar per color
+/- 1-2 tablespoons of water
food colouring
Bake the little Easter cookies with the kids. They love to mess around with icing and sprinkles the most in our kitchen. Afterwards we first clean up the mess together of course, then brew a pot of tea and taste our bakings!
How to make the Easter bicuits
Mix butter, sugar & vanilla sugar until it's creamy.
Then you mix in the egg until it's absorbed in the dough.
Add sieved flour with salt and baking powder in little bits.
Knead the dough by hand until it's smooth and elastic.
Cover the dough with cling film and place the bowl in the fridge for an hour.
Roll the dough to 1 cm thickness, cut out Easter shapes.
Place the cookies on parchment paper, put them back in the fridge for 30 minutes.
Preheat the oven to 170°c.
Bake the cookies for 8-10 minutes and let them cool on a wire rack.
Stir water and lemon in icing sugar until it's thick, smooth and shiny icing.
Add the water per spoon so the icing won't get to thin.
Make for instance some white bunnies with sprinkle tails and eyes.
Give the white icing different pastel colours with food colouring.
Brush coloured icing on all cookies and decorate with sprinkles.
Sprinkle decoration on the wet icing then let it dry completely.
When the icing is completely dry scrape off the edges where spilled.
The cookies taste nice and super sweet. Glad they're only small!
