Shopping list for four
400g fresh linguini
1 tablespoon olive oil
1 large courgette (cubed)
2 red onions (halve slices)
2 cloves of garlic (crushed)
250g chestnut mushrooms (sliced)
100g Philadelphia (cream cheese)
200g smoked salmon (in pieces)
sea salt & freshly ground black pepper to taste
chives to taste
Today we make liguine al salmone, a delicious pasta low on calories with lots on flavour. Quickly made and we are hungry, so we are going start right away!
How to make Liguine al Salmone
Bring a large pot of water to the boil, cook the pasta al dente.
Fry tonions, garlic, courgette soft, then add the mushrooms.
Stir in the cream cheese, allow it to melt a minute.
Season the vegetables with grounded black pepper & salt.
Stir in the smoked salmon, allow it to warm through.
Meanwhile the pasta is cooked, allow it to drain well.
Plate pasta, spoon sauce on it, ground pepper, cut chives, ready!
Serve the Liguine al Salmone with a fresh salad and shaved Padano. buon cibo!
