Shopping list for 10 double cookies
150g unsalted butter
225g plain flour
3/4 teaspoon baking powder
pinch of salt
1 free range egg yolk, large
80g caster sugar
1½ teaspoon vanilla essence
jam, such as berry or plum
icing sugar for dusting
By now we have arrived in Finland and immediately we start looking for a sweet Finnish bake. Soon we discover the Lusikkaleivat or teaspoon cookies, Finland's traditional jam cookies. Only the teaspoons are a bit larger than at home but we do not mind at all...
How to make Lusikkaleivat
Melt de butter on medium heat, leave it on for 15 minutes.
Sieve flour, baking powder and salt together in a bowl.
The butter is brown and smells nutty. Transfer it to a bowl.
Add sugar, egg yolk and vanilla to the melted butter.
Preheat the oven to 170 ° C.
Mix the ingredients until combined then add the flour-mixture.
Mix until the dough is crumbly but cohesive and looks like wet sand.
Scoop a spoonful of dough crumbs and press them together.
Scrape the spoon on the rim of the bowl to make a spoon shape.
Place the cookies on a baking tray covered in parchment.
Bake the cookies in 12-15 minutes light brown.
Let de cookies cool completely on a wire rack.
Spread jam on one cookie then press a second cookie on it.
Lightly dust the cookies with icing sugar before serving.
