2 large pork chops
75ml Italian olive oil
200g baby asparagus
1 shallot, finely chopped
175g mixed mushrooms
grated sea salt and black pepper
2 tablespoons of double cream
150g Taleggio cheese or soft Brie
garlic & rosemary sautéed potatoes
The recipes by Italian Chef Gino D'Acampo are often simple to make and really delicious and this one is ceretainly no exception. With the delicious juicy pork chops, cheese and various fresh vegetables this really is the dish of a chef.
How to make maiale alla montanara
Start by heating the griddle
Pour the olive oil into a dish and coat the chops in it.
Season the chops and grill 4 minutes each side.
Now coat the asparagus in the same olive oil.
Take the chops from the griddle and pit it aside.
Grate sea salt and black pepper on the asparagus and on the mixed mushrooms
Grill the asparagus in 5 minutes al dente.
In the meantime fry the onion soft.
Fry the mixed mushrooms 3 minutes with it.
Add the cream and let it thicken for a minute or two.
Spoon the mushroom mixture over the chops.
Lay slices of cheese on top and turn on the grill.
In a baking tray place the chops 2 minutes under the hot grill.
Fry the garlic, sautée the potato slices in it and add rosemary.
Plate the asparagus with pork chops on top, potatoes on the side.
