a pinch of baking soda
1 tablespoon ghee or butter
240g (Maida) flour
80g caster sugar
+/- 150 ml water
vegetable oil, for frying
icing sugar, for dusting
It's almost Diwali so we're going to bake special biscuits, Maida biscuits to be precise. The cookies are actually named after the Maida flour with which they are made but we have not found it. But we are assured that patent flour tastes just as good. We're going to try, we'll do our very best anyway!
How to make 'Maida' Biscuits
Put the baking soda with the butter in a bowl.
Rub the baking soda into the butter using your fingers.
Add flour and sugar and mix it well with the butter mixture.
Gradually add the water and mix it into a stiff, smooth dough.
Shape a ball from the dough.
Roll the dough to +/- 1cm thickness.
Cut the dough into diamonds.
Let the dough rest a moment.
Heat the oil to 180°C.
Fry 6 biscuits at a time.
Fry the golden on both sides.
- When the biscuits are cooked, the bubbles disappear and float to the surface.
- Remove the light brown biscuits from the pan with a slotted spoon and drain on kitchen paper.
You can also bake the Maida biscuits in the oven. Preheat the oven to 180°C and bake for 15 minutes.
Sift icing sugar over the biscuits.
Place the biscuits on a clean platter to present them festively.
Store the cookies in an airtight container and they will stay fresh for 6-7 days.
