3 big or 6 small ripe tomatoes, finely chopped
½ onion or 4 spring onions, finely sliced
handful flat parsley, finely chopped
¼ teaspoon chilli flakes
a generous pinch of salt
1 lime or lemon, juice only
Finally, a nice fresh tomato salsa to conclude snazzie's weekend menu. Easy to make, ready quickly and if you let the salsa flavors blend in the refrigerator for a while, it's extra tasty! You can also make the salsa a day in advance, but cut some of the herbs over it before eating.
How to make this tomato salsa
Take a large bowl
Chop the tomatoes and cut the herbs.
Cut the spring onions into small rings.
Chrush the chili flakes and add it to the bowl.
Grind over some sea salt to taste.
Squeeze the lemon or lime.
Add the juice to the salsa.
Toss the salsa gently until combined.
Cover the bowl in cling film.
Serve the tomato salsa straight from the fridge.
