2 onions (chopped)
2 garlic cloves (chopped)
2 bell peppers (chopped)
750g beef mince meat
1 sachet mexican spices
1 tablespoon olive oil
400g tinned tomatoes
small tin tomato paste
2 tablespoons mango pulp
dash of sea salt & black pepper
3 tortilla wraps (large)
100g mozzarella
100g Grana Padano of Parmezan
Mary Berry got inspired by the Mexican tortilla for this savoury bake. Our recipe is loosly based on hers. The bake is quickly made and tastes very good. The kids like to help so they cut the peppers with a plastic knife ;D
How to make the tortilla bake
Heat the olive oil in a casserole.
Fry onions and garlic soft.
Add the mince and fry it brown.
Stir in the peppers as well.
Let the mince meat mixture simmer for 30 minutes and preheat the oven to 200°C
Put these ingredients out already.
Stir in the Mexican spices.
Add the tinned tomatoes.
Followed by tomato paste.
And the mango pulp.
Season with salt and pepper.
Spread 1/3 filling in the form.
Cover the filling with a tortilla wrap.
Spoon another layer of filling on top.
Make 3 layers in total and end with cheese.
Because we have guests who do not like cheese we cover only half the bake with it.
Tip: if you leave out the cheese then cover the bake in tin foil, otherwise the mice meat will be dry.
Bake the tortilla 25 minutes in the oven.
Allow the bake to cool a minute.
Serve the bake with a green salad.
