Shopping list for 24 mini cupcakes
125 grams butter
125 grams sugar
1 free-range organic egg (small)
1 teaspoon vanilla extract
125 grams self-raising flour
2 tablespoons milk
250 ml double cream
2 tablespoons caster sugar
fondant icing, in various colours
Bake the cupcakes with our recipe.
Beat the cream with 2 tablespoons sugar.
Spoon the whipped cream into a piping bag.
Place in the fridge until you are ready to pipe the cupcakes.
How to make streamers from fondant icing
Dust your work surface with icing sugar
Fetch all the colours fondant icing you have.
Knead it until soft.
Roll the fondant icing thinly under bakng paper.
Find a chopstick or use a (cleaned) pencil
Roll thin strips around your stick.
Roll all the colours you've got.
Allow the streamers to harden.
- Fondant does not harden very quickly, we often make it a day in advance
- Is your fondant not hard enough? Then place the streamers flat on the cupcakes
Stick the streamers into the whipped cream.
Finally sprinkle your serving dish with sugar confetti.
