6 slices wholemeal bread
25g butter, softened
olive oil
50g baby spinach leaves
2 free range organic eggs
60 ml milk
75g cheddar cheese, finely grated
6 mini roma tomatoes, halved
A tasty and healthy lunch dish for Mother's Day is easy to make, we make mini cheese and spinach quiches. Just mix everything, put in the oven for 25 minutes and they're ready! Mum really likes these quiches and the little monsters like them too. Let the mini-quiches cool down first for the kids!
How to make mini quiches with cheese and spinach
Cut the crusts from the bread slices.
Flatten the bread by rolling with a rolling pin.
Spread a thin layer of butter on one side.
Press the bread slices in the muffin tin
Drizzle the bread cases frugally with olive oil and set them aside
Then make the filling
Place the washed and drained spinach in a large bowl.
Boil a small pot of water and pour it pover de spinach.
Let the spinach drain for a moment and preheat the oven to 180°C
Squeeze the remaining water out.
Chop the spinach finely.
Grate the Cheddar finely.
Cut the tomatoes in half.
Place the spinach, eggs, milk and cheese in a clean bowl.
Pour the mixture into the bread cases and place tomatoes on top.
Slide the tin in the oven and bake the quiches for +/- 25 minutes.
Allow the Cheese and Spinach mini quiches to cool slightly before serving.
