200 ml whipped cream
50g fine sugar
300g dark chocolate (70%), chopped finely
50g soft butter
4 tablespoons strong espresso, cooled
4 tablespoons cocoa, sifted
2 tablespoons Disaronno, optional
Make a nice Mother's Day gift for a Mummie who loves coffee and chocolate, you can make them with or without alcohol. It is a two day project but then you have something special. Because they are super yummie, those mocha truffles!
Here is how you make them
Bring the cream and sugar just to the boil.
Place butter, coffee, chocolate and liqueur in a bowl.
Pour the hot double cream mixture on top.
Then add the finely chopped chocolate to the mixture.
Let the mixture rest for 2 minutes,for the chocolate to melt.
Then stir the chocolate mixture until it is glossy.
Allow the chocolate to cool to room temperature.
Cover the chocolate mixture and place in the fridge overnight, for the flavors to blend
Roll the chocolate mixture into balls.
Roll the Mocha Truffles through the cocoa powder and wrap them.
