200g peaches or nectarines
200g strawberries
450ml slagroom
200ml condensed milk
2 teaspoons vanilla extract
wooden lolly sticks
Ice cream from Napoli, to make at home, without an ice maker? REALLY? Yes, really! And it tastes awesome :D Thankfully there is a lot to go around ...
How to make Napolitan Ice Cream
Peel the skin of the peaches then de-stone them.
Wash the strawberries and remove the hulls.
Put the peaches in the food processor then pulse.
It is most tasty if the fruit still has some texture.
Cover the peaches in cling film.
Blend the strawberries too.
Cover the strawberries in cling film too.
Place both bowls with fruit pulp in the fridge for now.
Place the cream, milk and vanilla in a mixing bowl.
Beat it until soft peaks appear, divide it into three.
Fold with a whisk the strawberry pulp into the 1/3 of cream.
Line a cake tin with cling film.
Pour in the strawberry cream.
Put the cake tin in the freezer.
Leave the strawberry ice cream in the freezer for 2 hours and place the other two bowls in the fridge.
Now pour the 1/3 vanilla mixture on top of the strawberry.
Stick in minimal 8 lolly sticks, they stay up in the frozen layer.
Pour after 2 hours freezing the peach mixture on top.
Return the ice cream tin for minimal 4 hours to the freezer.
Remove the ice cream from the freezer 10 minutes before serving.
Lift the ice cream out of the tin by the cling film then slice it.
For our youngest mini-monsters we cut the sides off the slices, they have it in popsickle shape.
