135g self-raising flour
pinch of salt
1 tablespoon caster sugar
2 tablespoons melted butter, plus extra
125ml milk
1 free-range organic egg
fresh pineapple, drained
For National Pancake Day, we don't just want to bake any old pancake, duh! ;) We think it do has to be something special, you can eat a regular pancake on any regular day. But upside-down pancakes with pineapple? That's not so regular, we actually want to say, that's quite special! :))
How to make Pineapple Upside-Down Pancakes
First make the batter
Place the milk in a jug and add the melted butter to it.
Crack the egg into the mixture in the jug and beat it all together.
Pour the milk mixture gradually into the flour mixture.
Beat it together again until it is a thick, smooth and fluffy batter, set it aside.
Cut the pineapple into thin rings and let it drain.
How to bake the pancakes
Melt a knob of butter in a skillet.
Spoon in 2 small gravy spoons of batter.
Bake the pancake for 15 seconds and place pineapple on top.
Flip the pancake over when tiny bubbles appear.
Gentle press the pancake's edge against the pan all around.
So not only the pineapple gets browned but the pancake's edge too.
