250g plain flour
a pinch of salt
2 free-range organic eggs, M
500ml semi-skimmed milk
a piece of butter, for frying
200g bacon
Dutch stroop or maple syrup
Today we bake vintage pancakes because this month, on the 18th, it's National Pancake Day again. All over the country, schools bake pancakes and the school children take them to the grandparents.We bake the pancakes with bacon in it and syrup. Just like when grandma was little ;))
How to make bacon pancakes with syrup
Sift flour and salt into a large bowl.
Beat the eggs frothy.
Mix the milk into the eggs.
Make a well in the flour.
Pour the milk mixture in parts into the flour and beat with a whisk until it has become a smooth batter
Beat well to make it lump free.
Fry the bacon until crispy.
Pour the batter over the bacon.
Fry the pancakes until golden brown, in a few minutes
Flip the pancake and fry until golden on the other side.
Serve the bacon pancakes with maple syrup.
