1 box vanilla wafers (Dille&Kamille)
900ml milk
200g caster sugar
9 egg yolks (free range)
150g pistachios
1 vanilla pod
250ml double cream
If we see old-fashioned butter wafers in the store we start to think: what can we make with those? Fill them with ice cream and cream, which is a lovely idea with this warm summer weather. Let's make some old fashioned ice cream wafers!
How to make ice cream wafers
Start by placing the container (belonging to an icemaker) into the freezer overnight.
Cut the vanillapod open lenghtwise and scrape out the vanilla.
Put the milk with the vanilla on low heat to near boiling point, then turn it off.
Break the eggs and separate the yolks from the white.
Mix the egg yolks with the sugar in a big bowl.
Whisk the egg yolks until they are pale yellow and fluffy.
Remove the pod and add the milk slowly through a sieve to the egg-mix.
Keep on stirring while you add the milk to the egg-mix.
Leave the mixture to cool 'au bain marie' for at least an hour, stir now&then.
Chop the pistachios until fine using a blender.
Pour the ice-mixture into the frozen container.
Let the ice cream turn for 20 minutes in the icemaker.
Add the nuts while the icemaker is turning.
Let the ice cream churn for another 10 minutes with the pistachios then turn the machine off.
Scoop the ice cream in a freezer container.
Whip the double cream until it forms stiff peaks.
Place a wafer on each plate.
Scoop a ball of ice cream on each wafer.
Pipe whipped cream all around the ice cream.
Press another wafer on top and tuck in. Enjoy!
