250g butter
120g caster sugar
1 sachet vanilla sugar
2 free range egg
350g flour
50g icing sugar
mini marshmellows
We bake a tin full of Easter Bunny biscuits in two batches, then we surely have enough for both Easter Days!
How to bake the Easter Bunny Biscuits
Mix butter and both sugars creamy.
Beat the eggs lightly.
Mix in the eggs.
Fold in the flour.
Knead the dough quickly smooth by hand. Wrap it in cling film and place it an hour in the fridge. Preheat the oven to 175 ° C.
Let the dough adjust for a minute.
Roll out the dough to 1cm thickness.
Cut out little and larger bunnies.
Place the bunnies on waxed paper on a baking tray.
Bake the bunnies until golden in 10-12 minutes.
Allow the biscuits to cool on a rack, bake the second half.
Stick marshmellow tails on the Easter Bunnies.
Sprinkle the bunnies lightly with icing sugar.
