375g plain flour
125g butter (room temperature)
125g caster sugar
1½ free range egg (room temp.)
1½ teaspoon vanilla essence
1 teaspoon baking powder
various colours of fondant icing
icing sugar, to dust your workspace
Our mini monsters like our simple vanilla cookies the best, as you can defenitely see on our website. We bake them often and a lot! The kids prefer to have fondant icing on top, which they can cut out and stick on themselves, in all kinds of fun shapes. Even the little ones participate! They also think fondant tastes the best :)) (no wonder, very sweet and in many beautiful bright colours!) They will need meticulous tooth brushing later!!!
How to make Easter biscuits with fondant icing
Place butter and sugar in a bowl.
Mix it fluffy and creamy.
Mix in the eggs and the vanilla.
Scrape the bowl all around clean.
Add flour and baking powder in 3 parts.
Fold the flour into the butter mixture.
Wrap the dough in cling film.
Place it 30 minutes into the fridge.
Knead the dough briefly by hand.
Roll the dough out to 1 cm thickness.
Cut out bunnies and eggs.
Put the cookies in the fridge for 15 minutes and preheat the oven to 170°C
Bake the biscuits in 12-15 minutes light brown.
Leave the 2nd and 3th batch in the fridge.
Leave the bisbuits on the tray a moment.
Bake the second and third tray.
Move the biscuits to cool on a rack.
Let them cool completely.
Cut out various shape from fondant.
Stick the icing with some water on the cookies.
