Toadstool biscuits
75g caster sugar
60g unsalted butter, soft
½ free-range organic egg + 1 egg yolk
175g plain flour
½ teaspoon baking powder
a pinch of salt
Today we bake funny 3D toadstools from cookie dough and tomorrow we make the decoration. We decorate the biscuits with white chocolate that we first melt and colour red and then we put white dots on the hats (of course!). We make the dots of icing, in a piping bag. It takes a little effort but then the toadstools are super cute and tasty!
How to make the cookie dough
Stir flour, baking powder and salt to combine.
Mix the butter and sugar until fluffy and creamy.
Add the egg and the egg yolk and mix it in.
Then beat the vanilla extract into the butter mixture.
Sift the flour in 3 parts into the mixture.
Fold the flour mixture into the buttermixture.
Knead it briefly by hand into a firm dough.
Wrap the dough and place it in the fridge for 30 minutes
Line two baking trays with waxed paper
Roll into balls between your hands.
Press the balls gently to flatten, on the baking tray.
Roll the dough into snakes and cut stems from them.
Place the stems at a little apart on the second tray.
Place the biscuits in the refrigerator for 15 minutes more
Preheat the oven to 180°C
First bake the hats for 8-10 minutes.
Let the stems remain in the fridge for now.
Slide the hats on the paper onto a wire rack.
Allow the biscuits to cool completely while you bake the stems
Bake the stems in 8-10 minutes as well.
Allow the stems to cool completely too.
Put the completely cooled biscuits in a bicuit tin anf finish them tomorrow
