Shopping list for 2
1 mango + 2 tomatoes
pinch chili flakes
hand of mint or flat parsley
4 spring onions
1 tablespoon olive oil (onions)
½ a sweet potato
2 tablespoons Greek-style yogurt
1 free range egg yolk
1 tablespoon olive oil (rösti)
400g salmon steak + olive oil
This pan roasted salmon with salsa is a light meal on hot days, tasty and healthy. You do not have to spend hours in the kitchen which is also very nice!
How to make the dish
Peel then chop the mango in pieces.
Blend half of the mango.
Chop the tomatoes fine.
Cut the parsley or mint fine.
Preheat the oven to 220°C, bake the spring onions for 10 minutes.
Stir mango, tomato and parsley together.
Coat the onions with olive oil.
Peel the sweet potato.
Grate the chili flakes on the salsa for bit of heat.
Grate the potato coarsely.
Stir egg yolk and yogurt together.
Stir until combined.
Stir it into the grated potato.
Fry the rösti 4-5 min. in a chef's ring, remove the ring, turn, fry another 4-5 min.
Grill the salmon on both sides 5-6 minutes on the hot griddle.
Place the salmon on the rösti with salsa on top and the onions on the side.
