Shopping list pancakes
250g mashed potatoes
75g whole wheat flour, sifted
1 teaspoon baking powder
2 free-range organic eggs
125 ml milk
sea salt & freshly ground pepper
2 tablespoons chives, finely cut

Shopping list burgers
500g ground beef
30g breadcrumbs
1 free range organic egg
sea salt & freshly ground pepper
2 tablespoons coarse mustard
2 tomatoes, sliced
2 red onions, cut into rings

Today a special pancake on snazzie, made of left over mashed potatoes and whole wheat flour. A hamburger on top, also very different, but strangely enough very tasty. You can make the hamburger even better with what ever you have left over in the fridge: optional: cheese, lettuce, pickle, mayonnaise and / or tomato ketchup. Today is Clear-the-fridge-day at Snazzie's!

How to make a Hamburger Pancake

First make the mashed potatoes

Mash the potatoes.

Warm the milk.

Add the butter.

Whisk until the butter has melted.

Make the burgers

Put eggs, bread crumbs, mustard and salt&pepper into a bowl.

Knead all into the mince until it is well combined.

Shape the burgers and fry them on both sides brown.

Fry the onions in the last minutes with the burgers.

How to make the pancake batter

Stir egg, milk and spring onion together.

Stir flour, baking powder, mash and salt & pepper.

Add the wet to the dry ingredients.

Stir all together into a thick batter.

Bake the pancakes on medium heat.

Flip over when the upside is dry.

Slide the pancakes onto a warm plate.

Top a pancake with letucce, a burger and onionrings.

On the side: tomato, pickle, mayo and ketchup.

Top with a second pancake and enjoy!
