Shopping list for the caramel sauce
100g caster sugar
50g butter, cubed + 50ml double cream
For the batter
60g flour
1 tablespoon caster sugar
1 free-range organic egg
150ml milk
2 tablespoons rapeseed oil, for frying
For the bananas
4 bananas
½ teaspoon icing sugar, sifted
½ teaspoon cocoa powder, sifted
This Sunday we are eating extra delicious pancakes, with caramel sauce and banana. Because banana is a favorite fruit of the monsters, this recipe immediately struck us! But... the caramel sauce that seems so easy to make unexpectedly turned into a disaster!
The sauce failed twice and because it was getting later and later, plan B came into play and we quickly bought ready-made caramel sauce. Then we still had a pancake party, even if it was a bit later than planned. The pancakes were very yummie anyway! ;))
How to make pancakes with caramel sauce and banana
Put sugar and water into a saucepan.
Bring it to the boil on medium hijg heat.
Wait for the sugar to dissolve but do not stir the mixture.
Turn off the heat when the mixture has a hazelnut colour.
Hold the pan tilted and swirl the mixture around
Add the butter cubes and let them melt.
Briefly stir in the double cream.
Allow the caramel sauce cool completely.
Then we are in touble, the sauce becomes way too hard, we try again immediately but we fail again, then we buy a bottle of Hero
Meanwhile you make the batter
Put flour, sugar, egg and milk in the mixer.
Mix it quickly together until all is well combined.
Pour the batter into a pitcher.
Heat the oil in a frying pan over medium heat.
Fry the pancake until golden on both sides.
Cut the bananas in halves.
Keep the pancakes warm and keep frying until the batter is gone
Slide the pancake onto a plate.
Place banana on it and drizzle with sauce.
Stir the cocoa powder into the icing sugar.
Roll up the pancake and place half a banana on the side.
Drizzle caramel over the pancakes and sift the sugar on top.
