7 free range eggs, medium
140g caster sugar
65g cocoa powder
butter, to grease
150g chocolate
250 ml double cream
fresh fruit
Optional: coloured marzipan, icing sugar
In the new Peppa Pig Christmas book a little cook book is included with a yule log recipe. Peppa uses a store bought cake but we bake it ourselves. So easy and much better tasting of course! If you are in an extra creative Christmas mood you make a marzipan Peppa to top the cake.
How to make a Peppa Christmas Yule Log
Separate the eggs in three bowls, you can see why!
If you used two bowls your whites would be now spoiled.
Weigh the right amount of sugar on the scales.
Mix sugar and egg yolks into a pale, thick mixture.
Sieve the cocoa on the egg mixture.
Fold the cocoa in using a spatula.
Stir until the mixture looks smooth&glossy.
Preheat the oven to 180 ° C.
Rub in the mixing bowl and beaters with lemon juice.
Place the egg whites into the bowl and mix.
Mix until the egg whites are really stiff.
Fold the egg whites into the chocolate mixture.
When you fold the egg whites in small parts into the chocolate mixture it makes the work lighter and the batter will be nice and smooth.
When all egg whites are incorporated this is what the batter should look like.
Pour the batter into a baking tray lined with greased baking paper.
Bake the cake for 20 minutes in the middle of the oven.
Let the cake cool, flip it over then pull off the baking paper.
Beat the double cream stiff while the cake is cooling.
Let the chocolate melt au bain marie.
Spread a thick layer of cream onto the cooled cake.
Spread the washed and chopped fruit onto the cake.
Roll the cake gently from the short side, open side under.
Pour the melted chocolate over the cake until it is covered.
Let the chocolate half harden before pulling lines into it using a fork.
Place the cake a few hours in the fridge to set.
Cut both ends off the cake using a sharp knife.
Decorate the yule log after your own imagination.
With only a light dusting of icing sugar 'snow' the yule log looks beautiful. But you can also decorate it with Christmas chocolates or a marzipan Peppa Pig.
