600ml water
300ml white wine vinegar
8 tablespoons demerara sugar
½ teaspoon sea salt
4 seasons peppercorns
1 cucumber
a bunch of radish
Today we start by making pickles (pickled vegetables) in a two week marathon of making a Pulled beef bun. We bake the buns, we cook the meat and we make sauce and pickles to go with it. YUMMY!
How to make Pickels
Slice the cucumber thinly, lengthwise.
Wash and slice the radishes also very thin.
Place the in jars with peppercorns in between.
Mix sweet & sour liquid of water, vinegar, sugar, salt.
Pour the liquid in, to just beneath the rim.
Seal the jars.
In the refrigerator you can keep the pickles at least one week.
