65g soft butter
2 teaspoons fresh dill
1/2 a lemon
sea salt and freshly ground black pepper
8 slices bread
150g smoked salmon
1/2 a cucumber

These luxurious salmon sandwiches by award-winning British food writer and cook Jo Pratt are delicious at your picnic or a high tea. The subtle lemon / dill butter will do the trick!
How to make the sandwiches
Combine the soft butter with the cut dill.
Add a splash of fresh lemon juice to the butter.
Grind black pepper and salt on the butter and stir.
Strike the butter on two toasted slices of bread.
Top the slices with sliced cucumber and mixed salad.
Slice the smoked salmon thinly.
Gently press the two slices toasted bread together.
Remove the crusts eventually, cut the bread in triangles and serve it with a wedge of lemon.
