125g flour
60g cold butter
50g caster sugar
1 free-range organic egg
a pinch of salt
1 egg yolk with a dash of cream, for brushing
50g peeled, unsalted peanuts
200g Tony's dark chocolate
The arrival of the first Chinese workers in the old Rotterdam district of Katendrecht was in June 1911. They were brought here by the Rotterdam Loyd, because of a major port strike that had to be broken quickly. The nasty trick worked and the strike was quickly broken! It was really a very nasty trick by Loyd, especially because the Chinese workers had to do the worst work for very little pay, in very bad living conditions.
The Chinese workers continued to live on Katendrecht without any dicrimination problems, among the original inhabitants. But during the financial crisis of the 1930s, the unemployment rate rose rapidly. Unemployed Chinese people come up with a good plan, they bake delicious peanut cookies and sell them on the street.

How to make them
Place the dough ingredients in a large bowl.
Rub the cold butter cubes into the flour.
Knead everything together until it is a cohesive dough.
Let the dough rest 15 minutes, set it aside for now.
Preheat the oven to 170°C and place baking paper on the baking tray
Roll out the dough.
Cut out serrated cookies.
Place the cookies on the baking tray.
Beat the yolk with the cream.
Brush it on the cookies.
Press the peanuts into the cookies.
Bake the cookies in 20 minutes.
Let the cookies cool on a wire rack.
Melt the chocolate au bain marie.
Allow the chocolate to set.
Serve the cookies with tea or coffee.
Store the cookies in a cookie tin.
