150g almond flour
½ teaspoon baking powder
75g liquid honey
½ teaspoon ground cloves
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
½ teaspoon ground nutmeg
¼ teaspoon sea salt
25g dried cranberry pieces
25g pistachios, shelled
Eid al Fitr starts today and it lasts for 3 days. All Muslims around the world celebrate that the fast is over and that they can eat again. There is abundant cooking and baking, the children receive gifts and the feast is normally celebrated with a lot of family.
Because the Covid19-virus is still floating around in the Netherlands, Eid al Fitr is celebrated at home this year, with the household, if at all possible. Very disappointing! For fun, we bake these tasty sweet, spicy cookies on this festive day, even though we do not celebrate Sugar Festival as native Dutchies.
How to make Cranberry-Pistachio Biscuits
Preheat the oven to 160°C and place waxed paper on a baking tray
Put the almond flour, baking powder and honey in a big bowl.
Stir it all together until it is well combined.
Add the salt and all the spices to the flour mixture.
Mix in all the spices, fold it into the dough.
Finally fold in the cranberry and the nuts.
Roll the dough into balls then flatten them.
Bake the biscuits in ± 15 minutes light brown.
While the biscuits are baking a lovely fragrant smell floats around the kitchen!
Allow the biscuits to cool on a wire rack.
The cranberry pistachio cookies taste delicious!
