Shopping list
250 g flour + extra to dust
15 g fresh yeast
dash of sugar
dash of salt
30 ml extra virgin olive oil
150 ml water

optional:
2 tablespoons extra virgin olive oil
poppy seed, cumin seeds, flaky sea salt

How to make Pita bread

Sieve the flour into a bowl.

Fresh yeast you buy at a Jumbo supermarket.

Weigh the yeast, crumble it then add the other ingredients.

Mix it at medium speed to a cohesive dough.

Dust a sheet of waxedpaper with flour.

Quickly knead the dough by hand.

Shape into a ball then place it back in the bowl.

Cover the bowl with cling film.

Allow the dough to double in volume in 30 minutes, at room temperature.

Place the dough on floured baking paper then roll a cylinder of +/- 30 cm.

Cut the cylinder in 8 pieces and shape circles 10 cm in diameter.

Preheat the oven to 220°c.

Measure the extra virgin olive oil with a tablespoon.

Divide the two spoons olive oil over the bread.

Sprinkle sea salt, cuminseed & poppyseed on the bread.

Bake the bread for 10 minutes in the middle of the oven.

The bread has to be baked in two batches, we leave three au naturel.

If the edges colour it's ready to take from the oven, just cool them.

Pita bread tastes lovely with some hummus or Halloumi cheese.
