Spicy gazpacho shots

What do you need to make gazpacho?
1 cucumber
1 stalk celery
2 spring onions
1 red chili
1 yellow pepper
4 Roma tomatoes
2 cloves of garlic
30 ml passata
75 ml extra virgin olive oil
45 ml balsamic vinegar
a dash of tabasco
sea salt & freshly ground black pepper
chives, finely cut

Gazpacho sidepicll

Gazpacho is a Spanish classic, a cold soup that is eaten as an appetizer or as tapas. The soup is made from raw vegetables, spices and herbs, so it is vegetarian, healthy and very tasty. Such an appetizer ticks all of snazzie's boxes on Father's Day!

How to make gazpacho

Wash, peel and chop the vegetables.

Pu the veg in the blender.

Add the squeesed garlic

Blend the veg until a thick puree.

Add the passata, olive oil and balsamico then blend it briefly with the vegetables, not too smooth but so it still has some structure.

Season the gazpacho with salt, pepper and tabasco.

Serve the gazpacho in shot glasses, top with chives.

Put the glasses in the fridge until they are very cold, tomorrow we bake savoury paprika sticks to go with it.
