Shopping list
8 tablespoons of olive oil
1 onion, sliced
2 celery stalks, chopped
2 medium carrots, chopped
6 boneless chicken thighs
175ml white wine
500ml chicken stock
3 tablespoons tomato paste
2 bay leaves + 3 sage leaves
1 sprig of rosemary
This recipe by Gennaro Contaldo for a lovely family chicken stew is one of Snazzie's favorites. Easy to make and delicious!
How to make Pollo alla Cacciatore
Heat 4 tablespoons olive oil in a frying pan.
Fry onion, carrot and celery soft in 3-4 minutes.
Fry the chicken in 4 tbspoons oil for 2-3 min.
Add the vegetables to the chicken pot.
Add the white wine, let reduce to half the volume.
Stir in tomato paste.
Add the chicken stock too.
Add the herbs to the stew.
Allow the stew to simmer for 30 minutes.
Serve the pollo alla cacciatore with cooked polenta or pasta.
