400g (frozen) pumpkin
½ teaspoon Dijon mustard
sea salt and freshly ground pepper
4 slices sandwich white bread
150g grated mozzarella/cheddar
sage leaves to taste
unsalted butter
flaky sea salt
We have cut the flesh of the hollowed pumpkin from Halloween last month into pieces, put it in bags then we placed those in the freezer. Just like AH has in their freezer, we made bags of about 400 grams. So convenient, for when you come across a nice recipe. Now - with Martha Stewart's recipe - we make sandwiches with it!
How to make Pumpkin Grilled Cheese
Steam the defrosted pumpkin cooked in +/- 20 minutes.
Mash the pumpkin in the blender.
Stir in the mustard, sea salt and freshly ground pepper.
Spread the pumpkin mixture on two slices of bread.
Top with cheese and some sage leaves,
Place two slices of bread on top.
Spread butter on both sides.
Fry the sandwiches in a dry skillet until golden brown on both sides, in approximately 4 minutes per side.
Cut the sandwich diagonally in half, sprinkle on flaky sea salt.
We eat the Pumpkin Grilled Cheese with salad, onion and pickles.
NB The opinions were divided with regard to this recipe, To the question: "Do you like it?" someone said no, really not! The other said "it is okay ..." but nobody was enthusiastic about it. Let's say, not all recipes can be for posterity!
