Shopping list
1 tablespoon of butter
1 pumpkin
2 onions
1 clove garlic
2 potatoes
2 vegetable stock cubes
1 tablespoon honey
Serve with
a dollop of Greek yoghurt
Optional: dragon rolls
For after the Michaelmas festivities, we make a delicious Pumpkin Soup with yummie dragon rolls to serve on the side. You bake the rolls one day, make the soup the next, or else you make the soup first and then the Dragon rolls, you may do whatever suits you best!
How to make Pumpkin Soup
Cut the pumpkin open, remove the pips and sludge.
Peel and cut the pumpkin into cubes.
Peel the potatoes thinly and wash them well.
Cut the potatoes into cubes, about the same as the pumpkin.
Wash pumpkin ena potatoes and dry them.
Peel and chop the onions coarsely.
Peel the garlic and cut off the ends.
How to make the Pumpkin soup
Heat a thick bottomed pan and melt the butter in it.
Add the onion and press the garlic to add it.
When the mixture is soft you add the pumpkin and potato.
Add the stockcubes, dissolved in a liter of water.
Bring the mixture to the boil and add the honey
Stir it all together well and cover the pan with the lid.
L.et it simmer gently for +/- 25 minutes, or until cooked well.
Pour the veg into a large bowl and let it cool.
Add the soup to the food processor and puree it until smooth.
Pour the soup back into the pan and reheat it when needed.
Serve the Pumpkin soup with a dollop of Greek yogurt on top.
Serve the Pumpkin Soup on Michaelmas as well, with the Dragon Rolls on the side
