Shopping list for 12 cupcakes
250g caster sugar
250g butter (room temperature)
3 free range organic eggs (room temperature)
1 teaspoon vanilla extract
250g self-raising flour, sifted
4 tablespoons milk
fondant icing, blue and yellow
sprinkles, blue and yellow
500 ml double cream
4 tablespoons caster sugar
We saw these cupcake cases and we have a little Minion fan at home, so we had to take the cases home right away. Our little fan wanted to start baking immediately, so we're baking Minion cupcakes today. With such a good little helper in the kitchen it will be a piece of cake! No pun intended!
How to make Minion cupcakes
Beat the butter with the sugar for 10 minutes until creamy and pale.
Add the eggs and the vanilla and mix them in.
When the mixture is well combined you sift in the flour.
Whisk the self raising flour very briefly into the batter.
Finally quickly beat in the milk.
Put the cases into the baking tin.
Puk neatly scoops the batter into the cases.
Filling the molds with an ice scoop is actually quite difficult for a little Puk, but it works out beautifully!
We have plenty of time while the oven preheats to 175°C
Now the cakes will bake in the oven for 20-25 minutes.
Puk is watching very carefully, waiting for the beeps!
While the cupcakes coolwe quickly cut out some blue and yellow fondant, for the soon-from-school-comers!
Knead the fondant icing until soft.
Roll it thinly.
Cut 6 circles out of yellow.
And 6 out of blue fondant icing.
Stick it on the cupcakes with some water.
Pipe whipped cream on top.
Puk can stick the minions in the cupcakes.
Finally scatter some sprinkles on top.
