Shopping list
1 bunch of radish, thinly sliced
1 - 2 kiwi fruit, peeld en diced
250 grams cherry tomatoes, in quarters
1 spring onion, in fine rings
1 small red onion, chopped finely
a clove of garlic,
1 lime, juice and zest
freshly ground sea salt and black pepper
½ bunch of coriander or flat parsley, chopped
Today is the day, the pork skewers have been marinating for hours, now we cook the rice and make a radish salsa to go with it, a tasty and healthy meal. We cut a few things for the salsa and it is ready quickly.
How to make the radish salsa
Wash and drain the vegetables.
Cut it all small or thinly.
Cut the sping onion in rings.
Press and grate the lime.
Chop the coriander or parsley finely.
Season the salsa with salt & pepper, finish with lime juice and zest.
