Make a frittata

Clear the fridge!

What leftovers do we have in the fridge?
50g bacon rashers
6 chestnut mushrooms, sliced
5 cherry tomatoes, halved
4 small boiled potatoes, sliced
handful of baby spinach
4 free range eggs
half a bag of mixed salad
½ a lemon
What do we always have in store?
1 onion
olive oil
sea salt & black pepper

The frittata is a creative dish, you can swap the bacon with cheese if you prefer. You can add all other vegetable left overs that needs to be eaten soon! The frittata has everything you daily need, according to the Dutch health organization.

Also nice, you do not have to throw away food and your fridge is cleared of the stuff that needed to be eaten soon. In addition, you put a nice meal on the table very quickly. Dinner or lunch, a frittata is always delicious!

 

How to make a frittata

Fry the bacon crispy.

Fry mushrooms and tomatoes.

Fry the potato slices golden.

Wash the spinach and wilt it.

  • Fry all in the same frying pan then let it drain on kitchen towels.
  • Use a clean pan to wilt the spinach in residue water. Immediately after let the spinach drain in a colander.

Break the eggs in a big bowl.

Whisk, season with salt&pepper.

Add potatoes and vegetables.

Pour the mixture in a frying pan.

Fry the frittata gently on medium heat for +/- 10 minutes. Then place a lid on the pan for 3 - 5 minutes, to make the frittata set on top.

Slide the frittata on a big serving dish and serve immediately.

Serve with lettuce, onion, tossed with olive oil, lemon juice, salt&pepper.
