Shopping list for 12 cupcakes
125g caster sugar
125g unsalted buttercubes, room temperature
2 free range organic eggs, room temperature
1 teasoon vanilla essence
125g self-raising flour, sifted
3 tablespoons milk
fondant icing in various colours
edible black marker
edible gold paint
red and pink sprinkles
To celebrate the Chinese New Year we bake vanilla cupcakes but we fill them with whipped cream. We decorate them with fondant snakes because this year it is the Year of the Snake. The children can help a lot, they can make holes for the cream, cut out fondant snakes, paint and roll the eyes. In short, there is plenty to do for everyone!
How to make Snake New Year's cupcakes
Preheat the oven to 180°C and place the paper cases in the cupcake tin
Mix butter and sugar until creamy and pale of colour.
Scrape all to the middle of the mixing bowl using a spatula.
Mix the eggs one by one into the butter / sugar mixture.
Add the vanilla extract and mix it in as well.
Sieve the baking flour into a big bowl.
Add it to the mixture in parts.
Fold all the flour into the butter mixture.
Finally stir the milk into the flour mixture.
Make sure it is well combined.
Fill the paper cases with the cupcake batter.
The cases are filled, all ready to be baked.
How to bake the cupcakes
Slide the baking tin in the middle of the oven.
Bake the cakes in ± 20 minutes golden brown.
First allow them to cool in the baking tin.
Let cool completely on a wire rack.
Make holes in the completely cooled cupcakes.
How to make Snake Cupcakes
Whip the cream until stiff.
Transfer the whipped cream to a piping bag.
Place the piping bag in the fridge until the cupcakes are completly cooled.
If you take the whipped cream out of the fridge it is set, because of the cold.
Pipe the holes you made in the cupcakes full with whipped cream.
Place the piping bag in the refrigerator and make the decorations first
Cut out red and pink circles.
Press gently on top of the cupcakes.
Cut out the snakes out of green icing.
Roll eyes and cut out tongues.
Pipe cream on top of the cupcakes.
Paint the snakes and press on the cream.
Scatter sprinkles on top of the cucakes.
