gingerbread & chocolate coins
A special Sinterklaas Tiramisu with gingerbread and cranberries is a very tasty dessert on Pakjesavond. Especially if you eat something simple so you can quickly start the children's party. Also nice, you can make it in advance!
Here is how you make it
Make a strong espresso and let it cool.
Put mascarpone, sugar and vanilla in a bowl.
Add the youguurt and lemon juice to it.
Get the handheld mixer, mix until combined.
If the mixture is too thick add a little bit of milk.
The mixture should be thick,creamy and airy, but still liquid.
Boil the cranberries for 5 minutes in a sthin layer of water.
Let the cranberries drain and cool.
- Roll them through the sugar and put them briefly in the freezer until cold, not frozen!
- Let the juice thicken until you have syrup and use it instead of coffee for kids
Crumble the gingerbread, with a rolling pin or food processor.
Place the crumbs in jars and pour coffee on top.
Spoon generously mascarpone cream on top.
Repeat with crumbs, coffee and the cream on top.
Decorate with mini-gingerbread, chocolate coins and sugared cranberries.
