125g soft butter
1 free-range organic egg
100g caster sugar
1 sachet vanilla sugar
250g cornflour
50g custard powder
1 teaspoon baking powder
2 tablespoons sugar sprinkles
Today Ketikoti is celebrated all over the Netherlands. For anyone who doesn't know what Keti Koti is: every year on July 1st the abolition of slavery is celebrated. Keti Koti literally means broken chains, the enslaved people then threw off their chains and were free!
At school the little monsters also celebrate this very festive day, with their class. The teacher reads a special story to them and they also do a role play. Very good! After school, at home we also read a fun picture book and drink tea with these tasty cornflour biscuits. It is such a festive day!
Mix the butter, with egg, the sugar and vanilla sugar.
Stir the corn flour with baking powder and custard powder.
Sift the flour mixture into the butter mixture.
Fold all ingredients together using spatula.
Cover the baking tray with waxed paper
Knead the dough briefly smooth.
Roll the dough balls between your hands.
Flatten the balls with using fork.
Preheat the oven to 180°C
Scatter sprinkles over the bicuits.
Bake the cookies for 15-20 minutes.
Do mind the biscuits do not brown!
Let the corn flour biscuits cool down on the baking sheet first
Then transfer the biscuits to a wire rack.
