15g anise sugar
225g clear honey
30g treacle
2 free range eggs
350g self raising flour
1 tbspoon gingerbread spice
a dash of salt
Once you tried homemade Dutch taai-taai you never want to buy it ready made again. It is easy to make and the kids love to help you bake and eat it!
How to make taai-taai
Place the anise sugar in a mortar.
Pestle the sugar until fine.
Beat one egg.
Stir the treacle into the egg.
Add the sugar to the mixture.
Weigh the honey, deduct the container weight.
Stir the honey into the egg mixture.
Sieve flour, salt, spices in a mix bowl.
Add the egg mixture to it.
Mix at low speed.
Keep mixing until you have coarse crumbs.
Knead the dough quickly smooth by hand.
Wrap in cling film, rest 1 hr in the fridge.
Roll the dough to 1 cm thickness.
Preheat the oven to 200°C
Cut out gingerbread men.
Place the men on baking paper.
Beat the second egg.
Brush beaten egg onto the men.
Bake for 10 minutes until golden brown.
Allow the men to cool for a bit.
The taai-taai tastes super yummie!
We have baked 25 taai-taai men so we eat them plain today, the remaining men we'll decorate tomorrow, with a nice frosting.
