cupcakes (download the recipe)
1/4 l double cream
small box red currants
1 tbspoons sugar
3 tbspoons water
red, pink and white icing fondant
golden decorating balls
edible paint, gold
Today we decorate the last cupcakes for this Chinese New Year with a popular traditional Chinese delicacy, Tang Hulu which in China is also called Bing Tangrulur. In Beijing, generations long the people grew up with the candy, so the Tang Hulur is part of the history of the city. On the street you see the sellers every, a fun sight to see!
The traditional Tang Hulur consists of haw berries that are strung on a long stick then dipped into a sugar syrup. It is a very popular candy among Chinese kids. Although today almost every fruit is strung on the sticks including cherry tomatoes also the Haw berry is still used. The sugar coating is now often replaced by chocolate.
Our tang hulur decoration is fake, it's currants in sugar syrup laced on a cocktail stick, symbolically so ;)
How to make Tang Hulur cupckes
First bake the cupcakes with our recipe
Let the cupcakes cool completely.
Dig a hole in the middle.
Make creme Anglaise like indicated.
Add the water to the powdered creme Anglaise.
Whisk it until it's combined.
Scrape the sides of the bowl clean.
Cover the bowl with cling film.
Place the bowl in the refrigerator for about 1 hour.
Wash the red currants and let them drain on kitchen paper..
String the berries onto the cocktail sticks, 3 or 4 a piece.
Dissolve the sugar in boiling water, let it boil down.
Dip the sticks with the berries in the sugar syrup and let it dry.
Get the creme from the fridge and fill a piping bag.
Fill the cupcakes to the brim with creme Anglaise.
Roll out pink fondant icing and cut out circles.
Stick the circles onto the cupcakes.
Paint the circles with edible paint.
Stick two Tang Hulurs in the middle,
Vary where you place the sticks.
