425ml whole milk
1 teaspoon caster sugar
7g fast-action dried yeast
300g plain flour
1 teaspoon baking powder
2 tablespoons unsalted butter
extra butter for the rings and to bake
To serve
Clotted Cream or Butter
Jam or Maple Syrup
Today we are baking crumpets. For those who don't know what crumpets are: they are British rolls that are eaten warm with a cup of tea (duh!). Traditionally with butter or clotted cream and jam on the side, in the morning or in the afternoon. Crumpets are fried in a frying pan and/or warmed up in a toaster.
These rolls are quite unusual for us Dutch people, but we find them very tasty. However, with our British recipe (which we followed to the letter), the crumpets don't taste exactly like they do in London. No idea why, maybe because we are in Rotterdam now. In any case, they still tasted very good, so try for yourself.
Here is how to make Crumpets
Poue the milk in a pan.
Warm it on low heat until just warm.
Then remove the pan from the heat.
Add the yeat and sugar en stir it.
Set the milk mixture aside for 5 minutes.
Sift the flour into a large bowl.
Add the baking powder.
Stir until well combined.
make a well in the center.
Pour the milk into the well.
Wisk the mixture until smooth.
Scrape the edges of the bowl clean.
Cover the bowl and set aside for 30-45 minutes.
Then you should see bubbles on top.
How to bake the crumpets
Grease the rings lightly with butter
Melt the butter on medium high heat.
Place the rings in the pan and heat them for 5 minutes.
Spoon up to three quarters of batter into the rings.
Fry the crumpets on low heat with the lid on the pan for 9-12 minutes.
Check now and then if the top is solidifying and bubbly and the other side is golden brown already
Remove the rings, flip en bake the crumpets for 2 more minutes*..
Traditional toppings for crumpets: clotted cream or butter with jam or maple syrup.
Also nice, not very healthy but you can be generous with those.
*Then repeat this baking process until all batter is used up
Our little monsters love the crumpets too!
But for us, as good as they taste and they do, three is one to many!
