½ packet pavesini (or lady fingers)
250g strawberries
3 free range eggs
250g mascarpone
160ml double cream
½ orange, juice and rind
85g caster sugar
1 teaspoon vanilla extract
powdered sugar to garnish
optional: 1½ tablespoon Grand Marnier
Snazzie's mini-monsters love Italian food, all kinds of pasta, gnocchi or pizza, they like to eat it all and preferably much. Also the Italian desserts are very much in demand, except for... tiramisu. They really do not like the coffee flavour and the cocoa.
Then we found this recipe by Aldo Zilli , Italian summer tiramisu with lady fingers & strawberries. This was an instant succes with the kids! (without Grand Marnier of course). This recipe is for 4 persons. The first time we made it wew used the double amount of ingredients, turned out it served 10. You have been warned! :)
Zest the orange halve, place zest and 60g sugar in a sauce pan.
Place the pan on low heat, optionally stir in Grand Marnier.
Add the juice, leave on until the sugar has dissolved.
Dip the lady fingers into the syrup.
Put the lady fingers aside so the syrup flavours can blend in.
Separate the eggs, place the yolks in a heat proof bowl.
Beat the egg yolks.
Place the heatproof bowl with the whisked yolks on a pan with boiling water (au bain marie). Add the remaining sugar (25g) and let it dissolve while stirring. Take the bowl from the pan when the sugar has completely dissolved.
Mix until the colour is light & the volume has doubled.
Pour the mix in a cold bowl and put aside.
Take the bowl with egg whites, beat until stiff.
Place double cream in a bowl and beat soft peaks.
Fold the mascarpone in the cream.
Add the egg yolk mix and fold it in.
Lightly fold in eggwhites and vanilla too.
Spoon on the lady fingers a layer of cream.
Then the strawberries and lady fingers again.
Repeat the layers, end with strawberries.
Cover the tiramisu with cling film, place 2-3h in the fridge to set.
Sprinkle powdered sugar on the tiramisu then serve.
